Cowboy Caviar with Avocado and Mango

- 1 package Happi Foodi Mexican Style Street Corn
- 1 cup chopped mini bell peppers
- 1/4 cup diced purple onions
- 1/2 cup black beans
- 1/2 avocado, cubed
- 1/2 mango, cubed
- salt & pepper
Chop the peppers, onions, avocado, and mango, then set aside. Drain and rinse the black beans to remove excess sodium. Heat the Mexican Style Street Corn according to package directions. Add all ingredients to a large bowl and season to taste with salt and pepper. Mix everything together and enjoy!
