Keto Spicy Poached Eggs

Spicy Poached Egg Brunch


  •  2 frozen Happi Foodi Southwestern Chicken Bowls

  • 1/2 cup sharp cheddar cheese, shredded

  • 1 teaspoon chili powder

  • 1/4 teaspoon cumin powder

  • 2 eggs

Heat Southwestern Chicken Bowls in the microwave for  5 1/2 minutes. Meanwhile, poach 2 large eggs and butter a small casserole dish. When the bowls are heated through, combine cheese, chili powder and cumin in a mixing bowl. Spoon the mix into the casserole dish and heat for 1 more minute. Place poached eggs on top. Garnish with sour cream, cilantro and avocado. Serves 2.
